1 package (5oz) organicgirl© baby bok choy
1 pint cherry tomatoes, halved
1 tablespoon preferred vegetable oil
12 eggs
1 cup shredded Cheddar cheese (4oz)
½ cup half-and-half
¼ cup finely chopped chives
¼ cup finely chopped parsley
¾ teaspoon fine sea salt
½ teaspoon black pepper

directions

  1. preheat oven to 350℉.  
  2.  lightly oil a 12 x 17” rimmed baking sheet. 
  3.  on baking sheet, toss together greens, tomatoes, and oil. spread out in a single layer and bake until greens are wilted, 10-15 minutes.
  4.  while greens and tomatoes cook, in a large bowl whisk together eggs, cheese, half-and-half, chives, parsley, salt, and pepper. 
  5. pour egg mixture onto baking sheet, making sure greens and tomatoes are evenly dispersed. bake until eggs are set, about 15 minutes. cool slightly and cut into rectangles to serve.
