1 1/3 cups ricotta (about 12 ounces)
zest of 1/2 lemon
1 tablespoon lemon juice
2 teaspoons minced fresh thyme
2 teaspoons minced fresh chives, plus more for garnish
1/4 teaspoon fine sea salt
1/4 teaspoon black pepper
4 thick slices rustic sourdough bread, toasted
2 large heirloom tomatoes, sliced
olive oil
salt and black pepper to taste


substitute with baby arugula


1. in a medium bowl stir together ricotta, lemon zest and juice, thyme, chives, salt, and pepper.

2. spread ricotta mixture in a thick layer on bread. top with greens, tomato, oil, salt and pepper, and chives.
