1 package (5oz) organicgirl© baby bok choy ♥
1 pint cherry tomatoes, halved
1 tablespoon preferred vegetable oil
12 eggs
1 cup shredded Cheddar cheese (4oz)
½ cup half-and-half
¼ cup finely chopped chives
¼ cup finely chopped parsley
¾ teaspoon fine sea salt
½ teaspoon black pepper

directions
- preheat oven to 350℉.
- lightly oil a 12 x 17” rimmed baking sheet.
- on baking sheet, toss together greens, tomatoes, and oil. spread out in a single layer and bake until greens are wilted, 10-15 minutes.
- while greens and tomatoes cook, in a large bowl whisk together eggs, cheese, half-and-half, chives, parsley, salt, and pepper.
- pour egg mixture onto baking sheet, making sure greens and tomatoes are evenly dispersed. bake until eggs are set, about 15 minutes. cool slightly and cut into rectangles to serve.
